Tra le incantevoli vie della città di Erice sorge la pasticceria di Maria Grammatico, nota in tutto il mondo per i tipici dolci ericini a base di mandorle. Esempio unico dell’arte pasticcera, i dolci tradizionali di Maria Grammatico vengono lavorati a mano e preparati con ingredienti rigorosamente naturali, proprio come avveniva cinque secoli fa nei conventi delle monache di clausura. Visitando Erice non si può fare a meno di essere catturati dal profumo e dal sapore di una genovese appena sfornata, di una deliziosa cassata siciliana o dai fragranti dolci di mandorla come i bocconcini o la frutta martorana.
La storia di Maria Grammatico Nata nel 1940, Maria Grammatico ben presto rimane orfana ed entra a 11 anni nel convento delle monache di clausura di San Carlo, ad Erice. In quel periodo, caratterizzato da intense giornate di duro lavoro, Maria faceva apprendistato e riusciva a carpire i segreti dell’antica arte pasticcera conventuale. Rimane al convento San Carlo 15 anni. Questo è il periodo del suo apprendistato. Abbandonato il convento, Maria decide di sfruttare quanto appreso e crea un piccolo negozietto - laboratorio proprio. Dopo lunghi anni di sacrifici e di tanta passione, apre un nuovo locale: la “Pasticceria di Maria” in Via Vittorio Emanuele. Grazie a lei, l´antica tradizione della pasticceria conventuale ericina è sopravvissuta negli anni, fino ad arrivare a noi.
Antichi odori e sapori rivivono grazie alla sapiente arte di Maria Grammatico. La mandorla è l’ingrediente principale della pasticceria di Erice insieme ad altri prodotti genuini come ricotta, fichi, agrumi e miele. Con essi, si preparano tanti dolci e biscotti tradizionali, tutti rigorosamente lavorati artigianalmente e dai nomi più svariati come i belli e brutti, i sospiri, i mostaccioli o come la lingua di suocera e la genovese con crema. La loro indiscutibile qualità e bontà è dovuta soprattutto alla passione che Maria Grammatico ha saputo infondere in quest’arte e che l’ha resa famosa non solo in Italia ma anche all’estero.

In the charming medieval town of Erice there is the Maria Grammatico’s cake shop, which is known worldwide for the typical Erice pastries made with almond paste. Unique example of the confectionery art, the traditional pastries by Maria Grammatico are handcrafted and made only with natural ingredients, just as they did five centuries ago in the convents of the cloistered nuns. Visiting Erice you can not help but be captivated by the aroma and flavour of a freshly baked genovese, of a delicious sic ilian cassata or by the fragrant almond pastries like the titbits or the martorana fruit.
The story of Maria Grammatico Born in 1940, Maria Grammatico soon found herself orphaned, so she entered the cloistered nuns convent of San Carlo in Erice at the age of 11. In that period, characterized by intense days of hard work, Maria trained as an apprentice and she was able to steal the secrets of the ancient art of the conventual pastry making. She remained at the San Carlo convent for 15 years. This was the period of her apprenticeship. After that, Maria left the convent and decided to use what she had learned to open her own small workshop. After long years of sacrifices and passion, she opened a new place: the “Pasticceria di Maria” in Via Vittorio Emanuele, in Erice. Thanks to her, the ancient tradition of the conventual pastry art of Erice has survived over the years. Maria Grammatico is especially known for the delicacies she prepares with her own hands and also for the moving story she told in “Bitter Almonds”, written by Mary Taylor Simeti (published by William Morrow and Company Inc. New York).
Ancient aromas and flavours come alive thanks to the skillful art of Maria Grammatico. The almond is the main ingredient of the Erice pastries together with some other natural products such as ricotta cheese, figs, citrus and honey. With them, many traditional pastries and biscuits are prepared. They are all handcrafted and have diverse names such as the belli e brutti, the sighs, the mustaccioli or like the mother-in-law’s tongue and the genovese with cream. Their unquestionable quality and taste is mainly due to the passion that Maria Grammatico instilled in this art and that made her famous not only in Italy but also abroad.
